WHO WANTS CAKE??

Mississippi Mud Cake
This is a classic Southern Cake.
2 cups sugar
2 sticks butter
4 eggs
1 1/2 cup plain flour
1/2 cup cocoa
1 1/2 cup chopped nuts
dash salt
1 tsp vanilla
1 3.5 oz can coconut (may leave out if desired)
miniature marshmallows
Cream sugar and butter together. Add eggs and blend well. Add remaining ingredients and mix well. Pour into a greased and floured 13 x 9 inch pan. (Or you can use a sheet cake pan if you want to make the cake thinner...just bake it for a shorter time) Bake at 350 for 35 minutes for a 13 x 9. When done, immediately cover top of cake with marshmallows. Do not remove cake from pan. Pour icing over marshmallows after cake cools.
(I usually have my icing ready, pull out the cake, put the marshmallows on it and leave it sitting on the hot stove, wait about 3 or 4 minutes until the marshmallows are melty and gooey, and then pour the icing over them while the cake is still hot)
Then I let the cake cool before trying to cut it.
Icing:
1 box confectioners sugar
1/3 cup cocoa
1/2 tsp vanilla
6 Tbsp milk
Sift sugar and cocoa together. Add other ingredients and blend well. Pour over marshmallows. Swirl frosting over marshmallows.
or - you can do it this way! Both are yummy!

1/2 cup cocoa
1 stick butter, melted
1/2 cup milk
1 tsp vanilla
Blend sugar and cocoa. Add the rest of ingredients and use mixer on low to combine. Then proceed as above.
