Low or Fat Free Substitutions
CORNBREAD SUBSTITUTE FOR DIABETICS
1 c. uncooked cream of wheat1 c. self-rising flour1 c. buttermilk1/4 c. cooking oil1 egg4 tsp. baking powder1/2 tsp. salt
Combine all ingredients well. Pour into a greased skillet and bake at 350 degrees until golden brown.
CREAM CHEESE SUBSTITUTE
1 c. plain non-fat yogurt, drained
Line sieve with white paper towel. Put yogurt in. Place in bowl to drain. Leave overnight in refrigerator. Diet cream cheese in the morning.
This is for those of you who want to substitute something healthy or lowfat.

Plain low-fat yogurt1/2 cup cottage cheese blended with 1-1/2 teaspoon lemon juiceFat-free sour cream
