THE BEST LITTLE PEANUT BUTTER CHOCOLATE CAKE COOKIE BITES
These are the best little cookies. Now you have to be patient--you can't eat them right out of the oven! LOL But if you are patient, let them cool off and then put that delectable peanut butter filling in the middle, I guarantee they will be worth waiting for!
First, heat your oven to 400 degrees.
INGREDIENTS:
1 cup sugar
1/2 cup softened butter (not melted--just soft)
1 large egg
1 teaspoon vanilla
2 cups flour
1/2 cup unsweetened cocoa
1-1/2 teaspoons baking soda
1/2 teaspoon baking powder
1 cup milk
Combine the sugar and softened butter in a large bowl. Beat at medium speed until well mixed (about 2 minutes) Add the egg and vanilla. Continue beating until well mixed and creamy.
Reduce mixer speed to LOW and add the flour, cocoa, baking soda and baking powder alternately with milk (starting with flour mixture and ending with milk.
Be sure to beat well after each addition.
Line cookie sheets with parchment paper or spray lightly with cooking spray...I like the butter flavor for cookies.
Using two teaspoons, drop the dough by teaspoonfuls about 2" apart...you want the dough to be about the size of a walnut--no bigger because it is a very RICH cookie and you don't want to die of DEATH BY CHOCOLATE!!! Don't press the cookie down--they will bake up nice and rounded.
Bake 6 to 8 minutes...they should be a little shiney and firm--don't overbake!
COOL COMPLETELY before removing from cookie sheet.
FILLING INGREDIENTS
1 cup powdered sugar
1 cup creamy peanut butter
1/2 cup butter, softened (not melted)
4 Tablespoons marshmallow cream
Combine ingredients and beat at LOW speed until creamy, scraping sides if necessary (1-2 minutes)
Spread filling generously onto the flat side of one cookie...it's best to do HALF of the cookies and if you have filling left you can add a little more to each cookie.
Top each with remaining cookies (flat side down)
Makes 2-3 dozen depending on how big you make each cookie. Have fun!
You can lick the bowl when you're done--yes, it's that good!
