THE CAKE THAT WON'T LAST

The Cake That Won't Last
One box white cake mix
3 eggs,beaten
1/3 cup vegetable oil
1 tsp.vanilla extract
1(20 ozs.)can crushed pineapple(undrained)
1 cup pecans, chopped
2 cups coconut
3 ripe bananas,well mashed
Put all ingredients in a large bowl and let sit for about 5 minutes
Do not beat mixture with a mixer.
Stir by hand with a sturdy spoon.
Spray a 9x13 pan with Pam.
Put mixture in prepared pan.
Bake in 350ºoven approx.1 hour.
Cream Cheese Icing:
1 cup powdered sugar
2-1/2 tbsp.melted butter
4 ozs.cream cheese, softened
1 tsp.vanilla
Melt all ingredients in a medium saucepan on low heat till smooth.
Spread on cooled cake.
Yum, I made this a few hours ago and it is so moist and delicious. It doesn't need the frosting, but is good with it. The frosting is thin (almost sauce like.)

This reminds me of a Hummingbird Cake! Yummy
