COCA-COLA CAKE and SCARLETT'S SINFULLY GOOD BROWNIES.....UMMMMMMMMMMMM
Coca-Cola Cake
Cake Batter:
2 c. All-purpose flour
2 c. Sugar
2 sticks butter
1 c. Coca-Cola
3 T. Cocoa powder
1/2 c. Buttermilk
1 tsp. Baking soda
2 eggs
1 tsp. Vanilla extract
1 1/2 c. Miniature marshmallows
Frosting:
1 stick butter
3 T. Cocoa powder
6 T. Coca-Cola
1 lb. Powdered sugar, sifted
1 c. Chopped pecans
1 tsp. Vanilla extract
Preheat oven to 350 degrees. Grease a 9"x12" pan. Stir flour and sugar in a large mixing bowl. Melt butter; add Coca-Cola, cocoa, and buttermilk to butter in a saucepan and bring to a boil. Pour butter/Coca-Cola mixture over flour mixture; add baking soda, eggs, vanilla extract, and marshmallows and mix well. Pour batter into prepared pan and bake for about 45 minutes, or until it tests done. Let cake cool for 10 to 15 minutes. For frosting, combine butter, cocoa, and Coca-Cola in a pan and bring to a boil. Remove from heat; mix in powdered sugar, pecans and vanilla extract. Spread over w
warm cake.
SCARLETT’S SINFULLY GOOD BROWNIES
MIX:
1 cup soft butter
2 cups sugar
1/3 cup cocoa
STIR IN 4 eggs
ADD:
1-½ cups flour
2 tsp. vanilla
¼ teaspoon salt
AND 1-½ cups chopped nuts if desired (optional)
Stir well, and pour into greased 1-inch deep baking pan
(9 x 11 or 13)
BAKE AT 350 for 20 minutes or until done.
If you want a "rocky road brownie", cover with 1 lb. mini marshmallows and bake for an additional 3 minutes. Let cool completely before frosting.
