CHOCOLATE PEANUT BUTTER FUDGE CAKE....YUM!

Wow, it's almost September...where has summer gone??  I am trying to get organized (which is no small task!)  When watching all the HOW TO shows I'm thinking WHY CAN'T I BE ORGANIZED??  Anyway, I'm tackling it little by little.  I came across a recipe the other day that I thought you might like...my neighbor and friend's son's birthday is tomorrow so I wanted to make something special for him.  Since chocolate and peanut butter are favorites I thought this cake
would be perfect for him.



CHOCOLATE PEANUT BUTTER FUDGE CAKE
2 cups flour

2 cups sugar

1 teaspoon baking soda

1 cup water

1 cup butter

¼ cup cocoa

½ cup buttermilk 

2 eggs

1 teaspoon almond extract

Combine flour, sugar and soda.  Mix well and set aside.

Combine water, butter and cocoa in a heavy saucepan on low heat.  Bring to a boil, stirring constantly.  Gradually stir into the flour mixture.  Stir in the buttermilk, eggs and almond extract.

Pour into a greased and floured 9 x 13 x 2 inch baking pan.

Bake at 350 for 30 minutes or until a toothpick inserted into the center of the cake comes out clean.  Let the cake cool completely before icing.

ICING:

1 cup creamy peanut butter

1 Tablespoon oil

¼ cup plus 1 Tablespoon butter

3 tablespoons cocoa

1 teaspoon almond extract

3-5 Tablespoons buttermilk

2-1/2 cups sifted powdered sugar

Combine the peanut butter and oil and mix well.  Spread on cooled cake.

Combine butter  and cocoa in a small saucepan and cook over low heat stirring constantly until butter melts and the mixture is smooth. 

Remove from heat and add remaining ingredients.  Beat until spreading consistency.  Spread over peanut butter mixture.
 
I made this cake last month for Tommy's cousin and he loved it so
pretty sure it will be a hit...I hope so!

Well it's finally Friday!!! 

I promised to let you in on a scrumptious recipe I made the other night ... it is so easy and you will definitely get raves...I found it on an old chocolate chip package - I save everything!  Felt it looked too good to throw away!   If you like chocolate this is for you:




 
 
 
CHOCOLATE SATIN PIE

Ingredients



Directions


WHISK together evaporated milk and egg yolks in medium saucepan. Heat over medium-low heat, stirring constantly, until mixture is very hot and thickens slightly; do not boil. Remove from heat; stir in morsels until completely melted and mixture is smooth.

POUR into crust; refrigerate 3 hours or until firm. Top with whipped cream before serving; sprinkle with nuts.

THE BEST LITTLE PEANUT BUTTER CHOCOLATE CAKE COOKIE BITES

These are the best little cookies.   Now you have to be patient--you can't eat them right out of the oven!   LOL  But if you are patient, let them cool off and then put that delectable peanut butter filling in the middle, I guarantee they will be worth waiting for!

First, heat your oven to 400 degrees.

INGREDIENTS:
1 cup sugar
1/2 cup softened butter (not melted--just soft)
1 large egg
1 teaspoon vanilla

2 cups flour
1/2 cup unsweetened cocoa
1-1/2 teaspoons baking soda
1/2 teaspoon baking powder 

1 cup milk

Combine the sugar and softened butter in a large bowl.  Beat at medium speed until well mixed (about 2 minutes)  Add the egg and vanilla.  Continue beating until well mixed and creamy. 
Reduce mixer speed to LOW and add the flour, cocoa, baking soda and baking powder alternately with milk (starting with flour mixture and ending with milk.
Be sure to beat well after each addition.

Line cookie sheets with parchment paper or spray lightly with cooking spray...I like the butter flavor for cookies.

Using two teaspoons, drop the dough by teaspoonfuls about 2" apart...you want the dough to be about the size of a walnut--no bigger because it is a very RICH cookie and you don't want to die of DEATH BY CHOCOLATE!!!  Don't press the cookie down--they will bake up nice and rounded.
Bake 6 to 8 minutes...they should be a little shiney and firm--don't overbake!
COOL COMPLETELY before removing from cookie sheet.

FILLING INGREDIENTS
1 cup powdered sugar
1 cup creamy peanut butter
1/2 cup butter, softened (not melted)
4 Tablespoons marshmallow cream

Combine ingredients and beat at LOW speed until creamy, scraping sides if necessary (1-2 minutes)

Spread filling generously onto the flat side of one cookie...it's best to do HALF of the cookies and if you have filling left you can add a little more to each cookie.
Top each with remaining cookies (flat side down)

Makes 2-3 dozen depending on how big you make each cookie.  Have fun!
You can lick the bowl when you're done--yes, it's that good!

August 3, 2013--FOOTBALL IS ALMOST HERE!

I'm excited--the third of August and FOOTBALL is eminently near!  Looking forward to Friday night's game--Patriots @ the Eagles....we will be cheering for the PATS!!!  GO PATS! Hmmm....guess I will have to roll out the Superbowl Recipe Book.  I saw some of those neat little bread rounds--they have less calories than a bun and think they might be good for a quick bite.
Will probably cook some bacon and have turkey and ham on hand combined with a little romaine and tomatoes and a garlic mayonnaise and then those dips!!!  Ummmm, will let you know later which one we decided on....and as I promised, the following post contains those delicious little sandwich cookies...so easy to make and so good!

AMISH SUGAR COOKIES

Here is a recipe I shared with my friend Linda. I told her it is old old old, but it's delicious! Here you go: AMISH SUGAR COOKIES 1 cup cooking oil 1 cup butter 1 cup sugar 1 cup powdered sugar 2 eggs 1 1/2 teaspoon vanilla extract 4 1/2 cups flour 1 teaspoon soda 1 teaspoon cream of tartar Recipe calls for 1 teaspoon of salt, but I only use ½ teaspoon. Directions Mix first 6 ingredients together; beat well. Fold in flour, soda, cream of tartar. Refrigerate 45 minutes. Roll in balls the size of walnuts, flatten with fork on ungreased cookie sheet. Bake at 350 degrees for 10 minutes. They should be just lightly brown around the edge, Leave on the cookie sheet until they cool off - they will tear if they're removed from the pan out of the hot oven!) (I flatten with a cookie press dipped in sugar and use parchment paper on the ungreased pan) Tomorrow I will share another cookie recipe I made for a friend's birthday--Chocolate Peanut Butter Puffs....yum!
