SENATE BEAN SOUP

A friend said when he was posted in Washington, D.C., he often ate in the Senate dining room and this was his favorite dish. This soup was so popular, that the senate once passed a law saying that it must be served every day in the dining room of the U.S. Senate. I don't know what the penalty was for breaking this law, because it was on the menu every day so no one ever found out.

Senate Bean Soup

1/4 cup oil
2 cups chopped onions (not sweet ones)
1 cup chopped celery
1 clove garlic, minced
5 small smoked ham hocks
2 quarts water (8 cups)
1 pound navy beans that have been soaked overnight
1 tablespoon vinegar
2 tablespoons catsup
1 teaspoon dried thyme
Combine these ingredients and place in a large pot. Bring to a boil, cover, and reduce to simmer. Cook for 2 hours.
Then add:
2 cups of potatoes, cut in 1/2 inch cubes
2 cups thinly sliced carrots
1 cup tomato juice
Return to a boil, cover, and reduce to simmer again potatoes and carrots are done, 20 to 30 minutes. Stir occasionally to prevent sticking. Remove ham hocks. If desired, chop lean ham and return to soup. Discard skin and bones.

CRANBERRY (NUT OR NOT)BREAD

3 eggs, beaten
1 can whole cranberry sauce
1 box yellow or spice cake mix
1 cup chopped nuts, optional
Combine eggs and cranberry sauce. Stir in dry cake mix. (I like the yellow cake mix to get more of the cranberry flavor, but the spice cake mix is good too.)
Beat 3 minutes on medium speed. Stir in nuts if used. Pour into two 8x4x4 greased loaf pans. Bake at 350° for 45 to 55 minutes or until the top springs back when lightly touched with your fingertips. Cool in the pans for 10 minutes. Turn out and finish cooling on racks.
Make great gifts. Freeze well too. Makes 2 loaves.

DOING SOMETHING GREAT

When was the last time you were challenged to do something really...well... great?

President Abraham Lincoln helped me to understand that there is a bit of greatness within all of us. It is said that he often slipped out of the White House on Wednesday evenings to listen to the sermons of Dr. Phineas Gurley at New York Avenue Presbyterian Church. He generally preferred to come and go unnoticed, so when Dr.Gurley knew the president was coming, he left his study door open. On one of those occasions, the president quietly entered through aside door of the church, took his seat in the minister's study, located just off the sanctuary, and propped the door open just wide enough to hear the preacher. During the walk home one Wednesday evening, an aide asked Mr.Lincoln his appraisal of the sermon. The president thoughtfully replied, "The content was excellent... he delivered with eloquence... he had put work into the message.." "Then you thought it was an excellent sermon?" questioned the aide.

"No," Lincoln answered. "But you said that the content was excellent, it was delivered with eloquence and it showed much work," the aide pressed."That's true," Lincoln said. "But Dr. Gurley forgot the most important ingredient. He forgot to ask us to do something great."There is nothing wrong with average lives and averageaccomplishments. Most of the good of the world is built on theaccumulated efforts of everyday people. But, as Lincoln seemed to know, a life should strive for some greatness.

Are you part of a relationship that, if given more effort, could be outstanding? Or do you volunteer for an organization which is truly doing something excellent? Have you joined a cause that is attempting something great? Or have you ever said to yourself concerning a beautiful dream, "I could never do that," while knowingthat if you were to attempt it and succeed, you just might accomplish something significant? If Abraham Lincoln is right, then every life should strive to reach a little further today than it did yesterday, for there is some greatness in each of us.

WHO WANTS CAKE??

Mississippi Mud Cake

This is a classic Southern Cake.

2 cups sugar
2 sticks butter
4 eggs
1 1/2 cup plain flour
1/2 cup cocoa
1 1/2 cup chopped nuts
dash salt
1 tsp vanilla
1 3.5 oz can coconut (may leave out if desired)
miniature marshmallows

Cream sugar and butter together. Add eggs and blend well. Add remaining ingredients and mix well. Pour into a greased and floured 13 x 9 inch pan. (Or you can use a sheet cake pan if you want to make the cake thinner...just bake it for a shorter time) Bake at 350 for 35 minutes for a 13 x 9. When done, immediately cover top of cake with marshmallows. Do not remove cake from pan. Pour icing over marshmallows after cake cools.

(I usually have my icing ready, pull out the cake, put the marshmallows on it and leave it sitting on the hot stove, wait about 3 or 4 minutes until the marshmallows are melty and gooey, and then pour the icing over them while the cake is still hot)

Then I let the cake cool before trying to cut it.

Icing:
1 box confectioners sugar
1/3 cup cocoa
1/2 tsp vanilla
6 Tbsp milk
Sift sugar and cocoa together. Add other ingredients and blend well. Pour over marshmallows. Swirl frosting over marshmallows.

or - you can do it this way! Both are yummy!

1 box confectioner's sugar
1/2 cup cocoa
1 stick butter, melted
1/2 cup milk
1 tsp vanilla
Blend sugar and cocoa. Add the rest of ingredients and use mixer on low to combine. Then proceed as above.

TODAY - September 25, 2009

Today, when I awoke, I suddenly realized that this
is the best day of my life, ever.

There were times I wondered if I would make it to today;
but I did! And because I did I'm going to celebrate.
To celebrate what an unbelievable life I have had so far;
the accomplishments, the blessings, and, yes, even the hardships
because they have served to make me stronger.

I will go through this day with my head held high and a happy heart
and I will marvel at the morning dew, the sun. the clouds, the flowers, trees and birds.

Today none of these things will escape my notice. Today, I will share
my excitement for life with other people. I will make someone
smile. I will go out of my way to perform an unexpected act of
kindness for someone I don't even know.

Today is the day I quit worrying about what I don't have and start being grateful for all the wonderful things I do have.

Orange Spritz
If you stack the finished cookies in a tin or other airtight container, place waxed paper between the layers to protect the chocolate decoration.

Ingredients
Makes about 2 dozen.
1/4 portion of the basic Sugar Cookie Recipe
1 tablespoon finely grated orange zest
2 ounces bittersweet chocolate, finely chopped

Directions
Preheat oven to 350 degrees, with racks on upper and lower thirds.. On a piece of parchment paper, pat out dough to 1/2 inch thick. Sprinkle zest evenly over top; knead to incorporate.

Transfer to a cookie press; pipe shapes, about 1 inch apart, onto ungreased baking sheets.
Bake cookies in upper and lower thirds of oven, switching positions of sheets halfway through, until edges are light golden, about 15 minutes.
Transfer to wire racks to cool completely.

Set a small heatproof bowl over a pan of simmering water; add half the chocolate to bowl, and stir until melted and smooth. Add the remaining chocolate; remove bowl from heat. Stir until smooth. Transfer chocolate to a pastry bag fitted with a very small (less than 1/16 inch) plain round tip, such as Wilton #1. (OR, put chocolate in a small ZIPLOC baggie--microwave for 20 second intervals, squeezing baggie to melt the chocolate--snip off super small end of baggie and drizzle on cookie.)

Transfer cookies to a sheet of parchment paper. Pipe chocolate in a zigzag pattern over tops. Let stand until chocolate has set. Store in airtight containers at room temperature, up to 5 days.

GREAT SILVER TIP!

Here is a really neat way to clean silver and it really works!!! No more of those $10+ silver cleaners for me!

How to Clean Silver with Baking Soda
by Lec Watkins
Silver is a really nice soft and warm metal. A favorite for jewelry and trinkets all over the world. It is such a shame silver tarnishes so easily. All the experts will tell you to store silver in acid free cloth or tissue paper to keep your silver tarnish free. But back in the real world most of us don't like to lock things away. We would rather use our silver cutlery if we're lucky enough to have some. Silver Jewelry is for wearing, handling and often leaving hanging around the house.
Silver will get tarnished, its a fact of life. But its not a fact to lose sleep over. Silver is simple to clean. You do not need to rush out and buy silver cleaning kits or silver polishing cloths either. Nearly all silver can be cleaned at home with a few simple items. I hope you find these silver cleaning tips useful.
A note of warning: any polishing of silver should be kept to a minimum. Silver is a soft metal and polishing will remove a tiny amount of the actual silver from the surface of your item. Over time this can have a noticeable effect, with a real ‘worn' appearance. So don't go mad with that cloth. Keep all polishing of silver gentle please!
How to Clean Tarnished Silver
Firstly silver tarnish is often surprisingly easy to remove simply with a soft cloth and a little time. You don't need to rub hard to remove the tarnish from silver. Cleaning silver with a microfiber cloth is a great idea as microfiber cloths are gentle and do not leave any ‘bits' behind. You'll quickly see the dark tarnish transfer from the silver to the cloth. When you've finished you can put the cloth into the washing machine so it can be cleaned and used again.

For very tarnished silver or ornate silver with nooks and crannies your cloth won't reach you will need a slightly more technical approach. There still is no need to reach for the chemical silver cleaners though.

Tough Silver Tarnish Remover
Glass or Plastic Bowl
Aluminum Foil
Salt
Bicarbonate of Soda (Baking Soda or Bicarb) Simply put a sheet of aluminum foil in the bottom of a glass (or plastic) bowl. Add your pieces of tarnished silver. Sprinkle on some salt and bicarbonate of soda (I'd use a tablespoon of each in a medium sized bowl). Add hot water. You will hear sizzling and the tarnish will be absorbed into the water then deposited onto the foil. It is electrolysis in action.
Cleaning silver with foil and soda is really quick and easy. But don't do it too often or if not really necessary as you will over time, wear away your silver.

CAKE IN A GIFT MUG

With the holidays fast approaching and a lot of us scrambling for neat ideas for inexpensive gifts, here is a cute idea that doesn't take much money--get the ingredients at $Store for even more savings!
Here's an idea--if you're wanting to give a gift to someone who isn't interested in making it, just make cupcakes, plop one in a coffee mug..put a cocoa mix underneath the cupcake and tie it up with a pretty bow! Enjoy!

Cake in a Coffee Mug (Gift Mug)
This recipe will make 8 or 9 coffee mug gifts.
1 (18.25 ounce) box cake mix any flavor
1 small box instant pudding mix (not sugar free), any flavor
Place dry cake mix and dry pudding mix into a large bowl and blend well with a whisk. This will be about 4 to 4 1/2 cups dry mix and will make 8 or 9 coffee cup cake mixes. Place 1/2 cup dry mix into a sandwich bag. Place mix into a corner of the bag and tie it there with a twist tie. Continue making packets until all your dry mix is used.

Suggested Flavor Combinations:
Lemon cake mix - lemon pudding
Yellow cake mix - coconut or banana cream pudding
Devils food cake mix - chocolate pudding
Pineapple cake mix - coconut pudding
Butterscotch cake mix - butterscotch pudding

Select a large coffee mug. Make sure that it contains no metallic paint as it will be used in the microwave. Check it to ensure that it holds 1 1/2 cups of water.

Glaze Mix:
1/3 cup confectioners' sugar
1 1/2 teaspoons dry flavoring like powdered lemonade mix, powdered orange breakfast drink mix, cocoa powder, powdered coffee creamer like hazelnut or french vanilla.(sold by coffee flavorings)
NOTES
Select the flavoring appropriate to the cake you are making.
For the pineapple coconut cake include flaked coconut in a separate bag with instructions to sprinkle it over the frosted cake.
Place the glaze mix ingredients into a sandwich bag and tie into corner of bag. Label this bag Glaze Mix and attach it to the other bag with a twist tie.
Place one baggie cake mix and one baggie glaze mix in each coffee cup.

Now attach the following baking instructions along with your Gift Card Greeting to each coffee cup:

Bake a cake in a coffee cup.!
Generously spray inside of coffee cup with cooking spray. Empty contents of large packet into cup. Add 1 egg white, 1 tablespoon vegetable oil and 1 tablespoon water to dry mix.
Mix for 15 seconds, carefully mixing in all the dry mix. Microwave on HIGH for 2 minutes.( you may not get satisfactory results in a low wattage small microwave).
While cake is cooking, add 1 1/2 teaspoons water to Glaze Mix and squeeze baggie until mixed.
Mix well. When cake is done, cut a small corner off the glaze baggie and drizzle glaze over cake in cup. Enjoy while warm.

THE VET

A veterinarian was feeling ill and went to see her doctor. The doctor asked her all the usual questions, about symptoms, how long had they been occurring, etc., when she interrupted him, "I'm a veterinarian and I don't need to ask my patients these kind of questions. I can tell what's wrong just by looking." She smugly added, "Why can't you?"
The doctor nodded, stood back, and looked her up and down. He then quickly wrote out a prescription, handed it to her and said, "There you are. Of course you realize, if that doesn't work, then we'll have to put you to sleep."

CREAM PUFFS

Who wants cream puffs? Here is the authentic
Wisconsin State Fair Cream Puff Original Recipe!!!
Makes 12 cream puffs
1 cup water
4 Tbsp (1/2 stick) butter
1/4 tsp. iodized salt (the fact that this is mentioned indicates how old this recipe is.)
1 cup all-purpose flour, sifted
4 eggs
1 egg yolk, lightly beaten
2 Tbsp. milk
2 cups whipping cream, whipped with vanilla extract and sugar (see below)
(Cool Whip will work but it won't be as good. Some people like to use vanilla pudding, with or without sugar, too.)
Sifted powdered sugar
Made from the ingredients Wisconsin is famous for — milk, cream, butter and eggs — cream puffs were a natural addition to the Wisconsin State Fair. Since their introduction in 1924, cream puffs have grown to be a signature Fair item, selling more than 365,000 annually. The Wisconsin State Fair dairy bakery operates around-the-clock during the Fair to meet the ever-growing insatiable demand. Some fairgoers wait all year for a chance to indulge in the rich sweetness of a State Fair cream puff, but now you can make them year-round in your own kitchen. The following recipe does not take dozens of employees or tons of whipping cream to make, but the taste is as genuine as the Fair. So, go ahead — indulge and savor the memories.
1. Heat oven to 375 degrees. Butter and flour one very large or two small baking sheets, or line with parchment paper.
2. Pour water into heavy saucepan. Cut butter into small pieces and add to water. Add salt. Place saucepan over medium-low heat so butter melts before water boils. Bring water just to boil.
3. Remove pan from heat and add flour all at once, stirring vigorously with a wooden spoon until dough forms into a ball and bottom of pan is filmed with flour. Let dough rest 5 minutes.
4. Add whole eggs, beating in one egg at a time. Dough should be stiff but smooth.
5. Immediately drop 1/4 cupfuls of dough 3 inches apart on baking sheet. (Or for a neater appearance, use pastry bag with 3/4-inch plain tip and pipe dough onto baking sheet.)
6. Combine egg yolk and milk in a small bowl. Brush each puff with glaze mixture, taking care not to let liquid drip onto pan.
7. Bake 35 minutes, until puffed, golden brown and firm.
8. Cool puffs on wire racks, pricking each with a cake tester or toothpick to allow steam to escape, or leave them in a turned-off oven with the door propped open for about an hour, until firm. (If baked pastry is filled before cool and firm, it will be soggy and may collapse.) Baked puffs should have hollow, moist interiors and crisp outer shells that are lightly browned.
9. Cut off tops, fill with whipped cream (use pastry bag with star tip or scoop the whipped cream with a large spoon). Replace tops of the puffs and sprinkle with powdered sugar. Enjoy!

YA GOTTA FOLLOW THE RECIPE

A man is showering up in a locker room with his buddy when he notices his friend is very well endowed. "Damn, Bob, you're hung!" Jim exclaims. "I wasn't always this impressive; I had to work for it.""What do you mean?" Jim asked. "Well, every day for the past two years I've spent an hour each night rubbing it with butter. I know it sounds crazy but it actually made it grow four inches! You should try it."Jim agrees and the two say good bye. A few months later the two are in the same locker room and Bob asks Jim how his situation was. Jim replied, "I did what you said, Bob, but I've actually gotten smaller! I lost two inches already!" "Did you do everything I told you? An hour each day with butter?" "Well, I was out of butter, so I've been using Crisco." Wait for it ........... Wait ........... You know it's coming... "Crisco!!?" Bob exclaimed. "Damm it, Jim, Crisco is shortening!"

VODKA

1. To remove a bandage painlessly, saturate the bandage with vodka. The stuff dissolves adhesive.
2. To clean the caulking around bathtubs and showers, fill a trigger-spray bottle with vodka, spray the caulking, let set five minutes and wash clean. The alcohol in the vodka kills mold and mildew.
3. To clean your eyeglasses, simply wipe the lenses with a soft, clean cloth dampened with vodka The alcohol in the vodka cleans the glass and kills germs. 4. Prolong the life of razors by filling a cup with vodka and letting your safety razor blade soak in the alcohol after shaving. The vodka disinfects the blade and prevents rusting.
5. Spray vodka on wine stains, scrub with a brush, and then blot dry.
6. Using a cotton ball, apply vodka to your face as an astringent to cleanse the skin and tighten pores.
7. Add a jigger of vodka to a 12-ounce bottle of shampoo. The alcohol cleanses the scalp, removes toxins from hair, and stimulates the growth of healthy hair.
8. Fill a sixteen-ounce trigger-spray bottle with vodka and spray bees or wasps to kill them.
9. Pour one-half cup vodka and one-half cup water into a Ziploc freezer bag and freeze for a slushy, refreshing ice pack for aches, pain or black eyes.
10. Fill a clean, used mayonnaise jar with freshly packed lavender flowers, fill the jar with vodka, seal the lid tightly and set in the sun for three days. Strain liquid through a coffee filter, then apply the tincture to aches and pains.
11. To relieve a fever, use a washcloth to rub vodka on your chest and back as a liniment.
12. To cure foot odor, wash your feet with vodka.
13. Vodka will disinfect and alleviate a jellyfish sting.
14. Pour vodka over an area affected with poison ivy to remove the urushiol oil from your skin. 15. Swish a shot of vodka over an aching tooth. Allow your gums to absorb some of the alcohol to numb the pain. And silly me! I've only been drinking the stuff.

THOUGHTS TO PONDER ON

Why do we press harder on a remote control when we know the batteries are almost dead?
Why do banks charge a fee on 'insufficient funds' when they already know there is not enough money?
Why does someone believe you when you say there are four billion stars; but have to check when you say the paint is still wet?
Why doesn't Tarzan have a beard?
Why does Superman stop bullets with his chest, but ducks when you throw a revolver at him?
Why do Kamikaze pilots wear helmets?
Whose idea was it to put an 'S' in the word 'lisp'?
If people evolved from apes, why are there still apes?
why is it that no matter what color bubble bath you use the bubbles are always white?
Is there ever a day that mattresses are not on sale?
Why do people constantly return to the refrigerator with hopes that something new to eat will have materialized?
Why do people keep running over a string a dozen times with their vacuum cleaner, then reach down, pick it up, examine it, then put it down to give the vacuum one more chance?
Why is it that no plastic bag will open from the end on your first try?
How do those dead bugs get into those enclosed light fixtures?
Why is it that whenever you attempt to catch something that's falling off the table you always manage to knock something else over?
In winter why do we try to keep the house as warm as it was in summer when we complained about the heat?
How come you never hear father-in-law jokes?
The statistics on sanity is that one out of every four persons is suffering from some sort of mental illness. Think of your three best friends -- if they're okay, then it's you.
Why do people constantly return to the refrigerator with hopes that something new to eat will have materialized?
