Lemon Blossoms

I used my Pampered Chef mini tart pans and the smallest cookie scoop from my set, do not overfill or the glaze won't run over the sides as nicely

Lemon Blossoms
Ingredients:
18 1/2 ounce package yellow cake mix
3 1/2 ounce package instant lemon pudding mix
4 large eggs
3/4 cup vegetable oil
Glaze: 4 cups confectioners' sugar 1/3 cup fresh lemon juice grated zest of 1 lemon 3 tablespoons vegetable oil 3 tablespoons water

Preheat the oven to 350 degrees.

Spray miniature muffin tins with vegetable oil cooking spray. Combine the cake mix, pudding mix, eggs and oil and blend well with an electric mixer until smooth, about 2 minutes. Pour a small amount of batter, filling each muffin tin half way. Bake for 12 minutes. Turn out onto a tea towel.

To make the glaze, sift the sugar into a mixing bowl. Add the lemon juice, zest, oil, and 3 tablespoons water. Mix with a spoon until smooth.

With fingers, dip the cupcakes into the glaze while they're still warm, covering as much of the cake as possible, or spoon the glaze over the warm cupcakes, turning them to completely coat. Place on wire racks with waxed paper underneath to catch any drips. Let the glaze set thoroughly, about one hour, before storing in containers with tight-fitting lids.

Who can resist a Paula Deen recipe???? Not me, that's for sure...here's one for her Buttermilk Pie--can't wait to make this one...

Buttermilk Pie
adapted from Paula Deen
1 cup sugar
1 cup buttermilk
1/2 cup Bisquick (or, as I used: 6 tbsp flour, 1 tsp baking powder, 1/2 tsp sugar, 2 tbsp oil)
1/3 cup unsalted butter, melted
1 teaspoon vanilla extract
3 large eggs
Preheat oven to 350 degrees F. Grease a 9-inch pie pan.Put all ingredients in a bowl and blend for 1 minute with a handheld electric mixer. Pour mixture into prepared pan. Bake for about 50 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes.Top with powdered sugar, cocoa powder, or (my favorite) cinnamon.

Sweet Georgia Brown's Peach Cobbler



My plan is to serve this with some cinnamon ice cream. Just soften a quart of vanilla ice cream, spoon it into a mixing bowl, and add a tsp of cinnamon. Use your mixer to mix it up well, pack it back into the container and refreeze. That's SO Good! I use it with several different pies, apple and pumpkin go especially well, but I think it'll really mesh with this cobbler too.

So, here's the recipe!


Sweet Georgia Brown's Peach Cobbler
2 lbs. Peaches, peeled & sliced
1/2 C Honey
1/2 stick Butter
1/2 C Brown Sugar
1 tsp. Vanilla
4 oz. Cornstarch
2 T Water
1 T Cinnamon

Ingredients for Cobbler Topping
1 stick Butter
1 C Oats
1 C Flour
1 C Nila Wafers cookies, crumbled
1 C Brown Sugar
Preheat oven to 350 degrees. Butter and sugar a glass 13 x 9 casserole dish.
To Prepare Filling...
Place peaches, honey, butter, brown sugar and vanilla in large sauce pot. Bring to a boil over medium to medium high heat. When mixture boils, add cornstarch mixed with water and cinnamon. Stir until thickened and remove from heat.
To Prepare Topping...
Place all ingredients together in stainless bowl and toss until well mixed.
To Prepare Cobbler...
Place filling in prepared casserole dish. Cover heavily with topping mixture. Bake for 30 minutes, until bubbly.
Serve with cinnamon whipped cream or vanilla ice cream.

My friend Mamie

It is Saturday and my friend Mamie is on her way to Virginia so I can't pick up my phone to pester her about anything although I know I probably could call her in her car--she is on her way to Virginia to claim a small furry bundle of joy! I sure hope she knows what she's doing!!!
Little furballs have a way of totally consuming every minute of the day eating, drinking, walking, playing, sniffing, licking, barking and making sure they know everything that's going on in the house at any given minute and then doing it all over again! I think it will be fun for her to be able to blog about all the happenings when she returns...we'll try to post pictures for everyone-don't know yet if it will be a baby girl or boy but as soon as we know we'll let you know! Know for sure it will be a Lapso Apso--they are SOOOOOOOO cute!
